Crazy Lady Cake with Nutella Brigadeiro Filling

Ingredients

Cake

  • 1 cup vegetable oil
  • 1 cup hot water
  • 1 tablespoon baking powder
  • 1 1/2 cups sugar
  • 2 cups all-purpose flour
  • 1 cup unsweetened cocoa powder
  • 4 large eggs

Nutella brigadeiro filling

  • 250 ml milk
  • 300 g Nutella
  • 2 (14-ounce) cans sweetened condensed milk
  • 1 tablespoon unsalted butter
  • 3 tablespoons cornstarch
  • 1 1/2 cups unsweetened cocoa powder

Preparation

Cake

  1. In a bowl, mix the eggs, sugar, flour, cocoa powder, and oil well

  2. Then add the hot water and mix well, then add the baking powder

  3. Grease a cake pan with butter and flour, pour in the batter, and bake in a preheated medium oven for 40 minutes, or until the cake is done

Nutella brigadeiro filling

  1. In a large, high pot, mix the cornstarch dissolved in milk, sweetened condensed milk, butter, and cocoa powder

  2. Cook over medium heat, stirring constantly until it pulls away from the bottom of the pan (brigadeiro consistency)

  3. When it pulls away from the bottom of the pan, remove from heat and mix in the Nutella

  4. Transfer the filling to a bowl, cover with plastic wrap touching the surface of the cream, and let cool

  5. Once cooled, refrigerate for about 1 hour

  6. Use as filling and/or topping
