No-Bake Vegan Snickers-Style Bars
Ingredients
Base
- 3/4 cup oats
- 2 tbsp smooth peanut butter
- 1/2 tbsp maple syrup
- 2 tbsp water
Peanut caramel filling
- 1/2 a packed cup dates
- 3/4 cup peanut butter (smooth or crunchy, doesn't matter as it will be processed)
- 1/3 cup peanuts (I like using roasted as they have a stronger flavour)
Chocolate topping
- 1 80g bar vegan dark chocolate
- Sea salt flakes (optional)
Preparation
Base
Pour oats into a high speed blender and blitz into really fine flour.
Pour into a bowl, and add all base ingredients. Mix with a spoon or by hand until well combined.
Line a rectangular food storage container about 6 x 7 1/2 inches with parchment paper, and press dough into it, flattening down well with your hands.
Filling
Combine dates and peanut butter in a food processor and blend until creamy.
Pour caramel over bases, smoothing it as you go, and scatter peanuts on top, reserving some for decoration, and pressing them into caramel.
With a flat knife, cut into 9 rectangular bars.
Transfer container to fridge and allow to set for about 30 minutes.
Chocolate
Melt chocolate in a double burner or in a heatproof bowl over a saucepan of water.
Using a flat knife, gently remove bars from their container and place on a baking sheet lined with parchment paper.
Dip each bar in melted chocolate, using two forks to hold them while dunking, and return to baking tray.
Scatter peanuts and sea salt flakes over each bar.
Refrigerate for another 30 minutes or until chocolate is set.
