Irresistible Caramel Peanut Butter Chocolate Bars
Ingredients
Base
- 1/2 cup raw cashews
- 1/2 cup oats
- 1/4 cup date caramel sauce
- 2 tablespoons coconut butter
Caramel Sauce
- 1 cup dates (around 14 dates)
- 1 cup water
- 2 Tbsp peanut butter
- 1 tsp vanilla protein powder *optional but gives you extra flavor
Chocolate Coating
- 1/2 cup 100% cacao chocolate chips
Preparation
Start by making the caramel sauce. Place the dates, water, peanut butter, and protein powder into a high-speed blender and blend until creamy.
Set the caramel sauce aside.
To make the base, grind cashews and oats in a high-speed blender until you have fine crumbs. Add 1/4 cup of the caramel sauce and coconut butter, mix it all together.
Pour the mixture into a baking tray (or silicone molds) lined with parchment paper to prevent sticking, and press the dough firmly to form a base.
Add the rest of the caramel sauce on top of the base and put it in the freezer for a couple of minutes until it sets.
Melt the chocolate chips and pour it over the caramel layer for the top coat.
Put the tray back in the refrigerator without covering to let it set a bit.
