Raw Carrot Cake Bites

Ingredients

  • 1 cup rolled oats
  • 1/4 cup walnuts
  • 1/4 cup almonds
  • 1 tsp cinnamon
  • 1/2 tsp cardamom
  • 5 big medjool dates
  • 1 big carrot (grated)
  • cashew frosting:
  • 1.5 cup unsalted cashewnuts
  • 8 tbsp coconut cream
  • 2 tbsp maple syrup
  • 1/2 tsp vanilla

Preparation

  1. Mix all cake ingredients in a blender until crushed and sticky, then add in walnuts & carrot, pulse a few times, transfer the raw dough to a box and press it flat

  2. For the frosting, add cashew and coconut cream to a blender, let mix until it turns out smooth and creamy

  3. Add maple and vanilla, mix, then pour frosting over the rawcake and leave in fridge for 1h to sit

  4. Decorate with walnuts & cinnamon on top
