Homemade Vegan Dandelion Honey

Ingredients

  • 360 dandelion flowers
  • 2 cooking apples
  • 1 lemon
  • 1 kg cane sugar
  • 1.5 liters water

Preparation

  1. Pick the dandelion flowers.

  2. Rinse them and roughly remove the green part under the flower, then put all the petals in a pot.

  3. Add the 2 apples cut into quarters, without removing the core, seeds, or skin.

  4. Add the zest of half a lemon and the juice of the whole lemon to the pot.

  5. Pour in the water and cook everything, covered, over medium heat for 30 minutes.

  6. Strain the resulting liquid, put it back in the pot, and add the sugar.

  7. Cook uncovered over medium heat with a gentle boil for 1.5 hours, stirring occasionally.

  8. To check the texture, take a little liquid with a spoon and drop a few drops on a cold surface. Wait a bit; if the drop moves slowly, it is ready.

  9. Pour the hot liquid into clean jars, seal, and store at room temperature.

Tips

  1. Leave some dandelions for pollinating insects like bees.
