Classic Pan-Fried Chicken Milanese Fillets

Ingredients

Chicken and seasoning

  • Chicken breast fillets, cut into thin cutlets
  • Minced garlic, to taste
  • Lemon zest, from 1 lemon
  • Lemon juice, from 1 lemon
  • Lemon pepper, to taste
  • Chimichurri sauce, to taste
  • Salt, to taste

Breading

  • Breadcrumbs
  • Breading flour (all-purpose flour can be substituted)
  • 1 egg
  • 1 teaspoon grated Parmesan cheese (optional)

Preparation

  1. Season chicken fillets with minced garlic, lemon zest, lemon juice, lemon pepper, chimichurri, and salt, then let rest

  2. Mix breadcrumbs and breading flour in a 1:1 ratio in a bowl

  3. Place a portion of the breadcrumb mixture on a plate

  4. Beat 1 egg in another plate

  5. Dip each chicken fillet in the beaten egg, then coat thoroughly in the breadcrumb mixture, pressing to adhere

  6. Place coated fillets in the freezer for 15 minutes

  7. Heat oil in a skillet over medium heat until hot

  8. Fry chicken fillets until golden brown on both sides

Tips

  1. Do not skip the lemon zest as it is essential for flavor

  2. Use one egg at a time to avoid waste; beat additional eggs only if needed
