Easy Oven-Baked Saucy Chicken
Ingredients
- 500g chicken shank, leg, or wing
Sauce
- 1.5 tablespoons tomato and pepper paste mixture
- 3 tablespoons yogurt
- 1/2 cup vegetable oil or olive oil
- 2 grated garlic cloves
- 1 teaspoon black pepper
- 1 teaspoon red pepper powder
- 1 teaspoon chili flakes
- 1 teaspoon thyme
- Salt to taste
Potato side (optional)
- Sliced potatoes
- A little olive oil
- Salt
- Red pepper powder
- Chili flakes
Preparation
In a large bowl, mix all the sauce ingredients until well combined.
Add the chicken pieces to the sauce and coat them thoroughly.
Cover the bowl with plastic wrap and marinate in the refrigerator for at least 1 hour, preferably overnight.
Preheat the oven to 190-200°C.
Line a baking tray with parchment paper.
Place the marinated chicken on the tray and brush with any remaining sauce.
For the optional potatoes, slice them and toss with a little olive oil, salt, red pepper powder, and chili flakes.
Arrange the potatoes around the chicken on the baking tray.
Bake in the preheated oven until the chicken is cooked through and golden brown.
Optionally, add other vegetables to the tray before baking.
Tips
Marinating longer enhances the flavor, but even a shorter time works if in a hurry.
Different chicken parts can be used based on preference.
Adding vegetables provides variety and makes it a complete meal.
