Stuffed Chicken Breast with Passion Fruit Sauce

Ingredients

  • 2 chicken breasts
  • 1 teaspoon paprika
  • salt and pepper to taste
  • 50 grams bacon
  • 1 purple onion

Stuffing

  • 1 cup arugula
  • 50 grams ricotta
  • 2 tablespoons nuts

Sauce

  • 2 peaches
  • 1/2 cup passion fruit juice
  • 2 tablespoons vinegar
  • 2 tablespoons honey

Preparation

  1. Mix the ricotta, arugula, and nuts to create the stuffing mixture.

  2. Cut a pocket into each chicken breast and stuff with the mixture, then secure with toothpicks.

  3. Season the stuffed chicken breasts with paprika, salt, and pepper.

  4. In a skillet, cook the bacon and purple onion until the bacon is crisp and the onion is softened.

  5. Add the chicken breasts to the skillet and cook until browned on the outside and fully cooked through.

  6. For the sauce, blend the peaches with passion fruit juice, vinegar, and honey, then heat in a saucepan until warmed.

  7. Serve the stuffed chicken with the sauce poured over the top.
