Balinese Spiced Chicken
Ingredients
- 2 free-range chickens, split in half but not separated
- Water as needed
Ground spices
- 1 tablespoon coriander
- 4 candlenuts
- 1 piece turmeric
- 15 bird's eye chilies
- 1 teaspoon shrimp paste
- Salt to taste
- Sugar to taste
Sliced spices
- 250 grams shallots
- 9 cloves garlic
- 3 pieces galangal
- 5 pieces lesser galangal
- 1 piece turmeric
- 3 pieces ginger
- 20 bird's eye chilies
- 5 stalks lemongrass
Preparation
Sauté the ground spices and sliced spices until fragrant and cooked.
Add the cleaned chicken and stir well. Add salt and sugar to taste.
Add water to cover the chicken, simmer on low heat until the chicken is very tender and the spices are absorbed, about 160 minutes. Taste and serve.
Tips
Do not let the sauce dry out as it is better with some sauce remaining.
