Garang Asem Chicken Stew

Ingredients

  • 1/2 chicken, cut into pieces
  • 6 shallots, thinly sliced
  • 4 cloves garlic, thinly sliced
  • 12 bilimbi, cut into pieces
  • 2 green tomatoes, cut into large pieces
  • whole bird's eye chilies
  • 2 red chilies, cut into pieces
  • 2 green chilies, cut into pieces
  • a thumb-sized piece of galangal, bruised
  • 2 stalks lemongrass, smashed
  • 3 kaffir lime leaves
  • 3 bay leaves
  • 750 mL water and coconut milk
  • salt and sugar to taste
  • banana leaves

Preparation

  1. Mix all ingredients and boil, adding sugar and salt to taste.

  2. Prepare a container lined with banana leaves.

  3. Steam the mixture until cooked, then remove and serve.

Notes

  1. Traditionally, this dish is steamed with banana leaves for better aroma, but it can be boiled for simplicity.
