Gluten-Free Chocolate Chunk Cookies

Ingredients

  • 1 egg
  • 3/4 cup brown sugar
  • Splash of vanilla extract
  • 1/2 cup butter, softened
  • 1 cup all-purpose flour {I used GF}
  • 1/2 tsp. baking powder
  • 1/2 cup chocolate chunks

Preparation

  1. Preheat oven to 350F and line a baking sheet with parchment paper.

  2. In a stand mixer or using a hand mixer, combine the egg, sugar, extract, and butter.

  3. Add in the flour and baking powder, then stir in the chocolate chunks.

  4. Scoop 8 cookies onto the baking sheet, slightly flatten them, and bake for 13 minutes. Enjoy!
