Goat Cheese Stuffed Turkey Meatballs

Ingredients

  • 1lb ground turkey
  • 1/3 cup diced marinated red pepper
  • 1 egg
  • 2 tbsp Italian seasoning
  • 1 tsp garlic powder
  • 1 tsp chili flakes
  • 1/2 - 3/4 cup panko breadcrumbs (regular or gluten-free)
  • 1/2 cup goat cheese

Preparation

  1. Preheat oven to 400 degrees Fahrenheit.

  2. Combine all ingredients except the goat cheese in a large bowl; add extra breadcrumbs if needed.

  3. Roll the mixture into balls and stuff about 1 teaspoon of goat cheese into the middle of each.

  4. Bake for 15 minutes on a lined baking sheet.

  5. Transfer the meatballs to a skillet with your favorite marinara sauce and simmer for 10 minutes.

  1. These meatballs are perfect to pair with pasta, on a sub, or with a Caesar salad.
