Goat Cheese Stuffed Turkey Meatballs
Ingredients
- 1lb ground turkey
- 1/3 cup diced marinated red pepper
- 1 egg
- 2 tbsp Italian seasoning
- 1 tsp garlic powder
- 1 tsp chili flakes
- 1/2 - 3/4 cup panko breadcrumbs (regular or gluten-free)
- 1/2 cup goat cheese
Preparation
Preheat oven to 400 degrees Fahrenheit.
Combine all ingredients except the goat cheese in a large bowl; add extra breadcrumbs if needed.
Roll the mixture into balls and stuff about 1 teaspoon of goat cheese into the middle of each.
Bake for 15 minutes on a lined baking sheet.
Transfer the meatballs to a skillet with your favorite marinara sauce and simmer for 10 minutes.
