Indian Lemon Rice Dish
Ingredients
- 3 cups cooked rice
- 3 lemons squeezed and chopped
- 1 cup raw and peeled peanuts
- 3 cloves garlic, sliced
- 2 cloves garlic crushed
- 1 tablespoon mashed ginger
- 5 curry leaves
- 1 teaspoon turmeric
- 1 tablespoon black mustard seeds
- Salt and black pepper to taste
- 1/2 cup grated coconut
- 2 tablespoons oil
- 1/2 cup chopped coriander
Preparation
Heat the oil in a saucepan and add the mustard seeds
After the seeds start popping, add the curry leaves and garlic slices
Sauté until the color of garlic changes and then add peanuts
After 5 minutes add turmeric, garlic, ginger, coriander and coconut
Sauté for two minutes and then add lemon juice
Turn off the heat and add the rice and fold
Decorate with lemon peel slices and parsley leaves and enjoy
