Spiced Vegetable Bukhari Rice Dish

Ingredients

  • 1 cup grilled eggplant cubes
  • 1 cup grilled potato cubes
  • 1 cup washed and soaked rice
  • 1 tablespoon oil
  • 1 onion, cut into long strips
  • 2 cloves garlic, crushed
  • 1 teaspoon pureed ginger
  • 1 cup grated tomato
  • 1 cup grated carrots
  • 1 tablespoon of tomato paste
  • 1 bunch of whole spices
  • 5 Curry leaves
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon turmeric
  • salt and pepper as needed
  • Boiling water as needed

Preparation

  1. In a saucepan, add oil, carrots and onions, then sauté until tender

  2. Add the whole spices (cardamom, cumin, cinnamon, cloves and bay leaf) and curry leaves

  3. Add the tomato juice, paste, salt and black pepper, ground cumin and mix

  4. Add boiling water and let it simmer for 5 minutes

  5. Add the rice and hot peppers if desired, and leave the rice on high heat until the water is absorbed

  6. Add the eggplant and potatoes to the surface of the rice and cook on low heat until done

  7. Serve with raisins and nuts as desired and enjoy
