Instant Onion and Chili Pickle

Ingredients

  • 3 medium-sized onions
  • salt
  • 1.5 tablespoons white vinegar or fresh lime juice
  • fresh green chilies
  • ginger, julienned
  • coriander leaves
  • 2 teaspoons chili powder

Achar masala

  • 1.5 teaspoons mustard seeds
  • 1 teaspoon fenugreek
  • 1 teaspoon fennel seeds

Tadka

  • 2-3 teaspoons mustard oil
  • 1/2 teaspoon asafoetida
  • 1/2 teaspoon nigella seeds

Preparation

  1. Slice the onions.

  2. Dry roast the achar masala ingredients until fragrant and coarsely pound them.

  3. In a bowl, mix the onions with salt, white vinegar or lime juice, green chilies, ginger, coriander leaves, chili powder, and the achar masala.

  4. Combine all ingredients well by hand.

  5. Heat mustard oil until smoky, then add asafoetida and nigella seeds to prepare the tadka.

  6. Pour the tadka over the mixture, mix well, and serve.

  1. This pickle enhances dal rice or roti paratha with a tangy-spicy flavor.
