Healthy Indian Sprouted Moong Paratha
Ingredients
- 1 cup sprouted moong
- Finely chopped green chili
- Coriander leaves
- Ginger
- Garlic
- Turmeric powder
- Asafoetida
- Salt
- 1 tablespoon oil
- 1 cup wheat flour
- Water as needed
Preparation
Coarsely grind the sprouted moong
Add finely chopped green chili, coriander leaves, ginger, and garlic
Add turmeric powder, asafoetida, and salt
Add 1 tablespoon oil
Add 1 cup wheat flour
Mix and using water, make the dough
Divide the dough into balls and roll out into circles
Cook the parathas on a hot griddle with oil, ghee, or butter until golden brown
Serve with boondi raita

Wash whole moong
Soak in water for three hours
Remove water
Cover with a lid or plate
Leave in a strainer in a warm place overnight
