Lemon Tahini Quinoa Bowl with Artichokes and Greens

Ingredients

  • 1 packet cooked quinoa
  • 1 tablespoon tahini
  • Juice of one lemon
  • Seasoning to taste
  • Spinach (handful)
  • Half an avocado, cubed
  • Handful of plum tomatoes
  • Grilled artichokes (from deli)
  • Olive oil (for drizzling)

Preparation

  1. Mix a packet of cooked quinoa with 1 tablespoon tahini and the juice of one lemon, season to taste. Keep extras in a container in the fridge - will last all week.

  2. Add the quinoa mixture to a bowl or lunchbox along with spinach, half a cubed avocado, and a handful of plum tomatoes.

  3. Drizzle with olive oil or a similar oil for extra flavor.
