Lemon Tahini Quinoa Bowl with Artichokes and Greens
Ingredients
- 1 packet cooked quinoa
- 1 tablespoon tahini
- Juice of one lemon
- Seasoning to taste
- Spinach (handful)
- Half an avocado, cubed
- Handful of plum tomatoes
- Grilled artichokes (from deli)
- Olive oil (for drizzling)
Preparation
Mix a packet of cooked quinoa with 1 tablespoon tahini and the juice of one lemon, season to taste. Keep extras in a container in the fridge - will last all week.
Add the quinoa mixture to a bowl or lunchbox along with spinach, half a cubed avocado, and a handful of plum tomatoes.
Drizzle with olive oil or a similar oil for extra flavor.
