One Pot Lentil Pasta

Ingredients

  • 1 tbsp olive oil
  • x2 chestnut mushrooms (60g)
  • 1/4 courgette
  • x1 large carrot
  • 300ml passata
  • x1 packet of merchant gourmet puy lentils x1 tbsp tamari
  • 1/2 white onion
  • x1 clove garlic
  • x1 handful broccoli
  • x1 tsp bouillon
  • x4 cups water
  • 150g pasta

Preparation

  1. Dice the onion, mushrooms and courgette, grate the carrot and garlic

  2. In a pan put the olive oil with the onions and garlic. Cook for 1-2 minutes and add the grated carrot

  3. Pour in the passata and add the tamari, bouillon powder, broccoli. Stir till combined then add the pasta and water. 4. Put the lid on the pan for 5 minutes

  4. Take the lid off and continue to cook for another 5 minutes

  5. Add the merchant gourmet lentils

  6. And continue to cook until the pasta is soft

  7. Serve straight away with cheese. *If you want to make this dish for later. Leave out the pasta and water from the ingredients list and just cook for 8-10 minutes in total until the veggies are soft. Then you can cook the pasta in a separate dish. This way you can blend up the sauce for weaning or any fussy eaters. This also works so well with rice or a baked potato! ⁣Enjoy
