Roasted Red Pepper Pasta Sauce
Ingredients
- 4 red bell peppers
- 2 tablespoons olive oil
- 5 cloves garlic, peeled
- 1 large shallot, chopped
- 1/4 cup cashews
- handful of basil leaves
- 1 pound pasta
- 1/2 cup vegetable broth
- 2 tablespoons lemon juice
Preparation
Roast the red bell peppers until charred and soft
Heat olive oil in a pan and sauté garlic and shallot until fragrant
Add cashews, vegetable broth, lemon juice, and blend with roasted peppers and basil to make the sauce
Cook pasta according to package instructions
Toss the cooked pasta with the sauce and serve
