Peanut Butter and Jelly Courgette Porridge
Ingredients
Chia jam
- 2 cups of fruit (I used raspberries)
- 2 tablespoons of chia seeds
- 2 or more tablespoons of maple syrup
- 1 tablespoon orange juice
Porridge base
- oats
- one small grated courgette
- milk or water (double the amount of oats)
Preparation
Chia jam
Heat the fruit on the hob until softened (around 5 minutes) and then mash with a fork. Add the rest of the ingredients and leave to cool. Place in a clean jar or container and keep in the fridge for up to 2 weeks.
Porridge cooking
Put your oats into the pan with one small grated courgette and the milk or water of your choice (double liquid to amount of oats) and cook until creamy.
Courgette porridge is a perfect way to sneak in an extra veggie into your day without even tasting it and it volumizes the porridge.
