Simple Avocado and Kale Pesto Pasta

Ingredients

  • 1/2 avocado
  • juice of 1/2 lemon
  • about 1 cup lightly steamed kale
  • 1 clove garlic
  • 2 tbsp nutritional yeast
  • a glug of olive oil
  • salt and pepper to taste
  • pasta (amount not specified)
  • sundried tomatoes (optional)

Preparation

  1. Add all ingredients to a food processor.

  2. Blitz until you have a smooth and creamy consistency.

  3. Mix with your pasta.

  4. Serve with some sundried tomatoes if desired.
