Turkish Soda Water Borek

Ingredients

  • 5 sheets phyllo dough
  • 2 eggs
  • 1.5 cups milk
  • 1 cup vegetable oil
  • 100 grams ricotta cheese
  • 100 grams kasar cheese
  • a handful of parsley
  • 1 bottle soda water

Preparation

  1. Mix the sauce ingredients in a suitable bowl and whisk them

  2. Set aside one tea glass of the sauce for later use on the borek

  3. Grease the baking tray

  4. Place one sheet of yufka in the tray and tear the remaining yufka into pieces to layer in the tray, adding sauce and filling to each layer

  5. After assembling the borek, fold in the sides of the yufka

  6. Cut the borek into pieces

  7. Pour the reserved sauce over it

  8. Add one bottle of soda water on top

  9. Bake in a preheated oven at 185°C for 30 to 35 minutes

  10. Allow to cool slightly before serving

Notes

  1. This borek is ideal for Ramadan suhoor or iftar meals
