Vegan Chickpea Tuna Salad
Ingredients
- 380 g chickpeas
- 1/3 red pepper
- 1/4 red onion
- 2 tsp tahini
- 1/2 tsp mustard
- 1 tsp lemon juice
- 2 tbsp dill
- 3 tbsp vegan mayo
- Salt + pepper
Preparation
Drain and rinse the chickpeas, then mash them in a bowl
Chop the red pepper and red onion into small pieces
In a large bowl, combine the mashed chickpeas, chopped vegetables, tahini, mustard, lemon juice, dill, and vegan mayo
Season with salt and pepper to taste, and mix well until fully combined
Chill in the refrigerator for at least 30 minutes before serving, if desired
