Vegan Tuna Poké Bowl

Ingredients

  • fresh beets
  • lime juice
  • soy sauce
  • sesame oil
  • miso paste
  • brown rice
  • cucumber
  • carrots
  • edamame
  • avocado
  • Trader Joe’s green goddess salad dressing

Preparation

  1. Dice fresh beets.

  2. Boil the diced beets in a marinade made of lime juice, soy sauce, sesame oil, and miso paste.

  3. Bake the beets to create a umami soft-textured tuna substitute.

  4. Prepare brown rice bowls.

  5. Top the bowls with finely chopped cucumber, carrots, edamame, avocado, and the baked beets.

  6. Drizzle with a mixture of Trader Joe’s green goddess salad dressing, half an avocado, and sesame oil.
