Creative Sushi Rolls with Plantain and Tofu
Ingredients
- Carrots
- Cucumber
- Avocado
- Brown rice
- Sweet plantain
Marinated tofu
- 1 block of tofu
- 2 tbsp soy sauce
- 1 tsp maple syrup
- 1/2 tsp Trader Joe’s umami mushroom seasoning
- 1/2 tsp cornstarch
Preparation
Marinated tofu
Add tofu and all marinade ingredients to a Tupperware container.
Close container with lid and gently shake to fully coat tofu.
You can add a little more soy sauce if you choose to let it sit for a little longer, but after shaking bake the tofu in the oven at 400F for 20 minutes or cook on a non-stick surface or griddle to crisp them up.
If using in sushi, allow to completely cool.
Sushi assembly
Cook brown rice according to package instructions
Bake sweet plantain slices until soft and golden, about 15-20 minutes at 400F
Prepare vegetables by slicing carrots, cucumber, and avocado into thin strips
Lay out a sheet of nori, spread a layer of brown rice, add fillings including marinated tofu and vegetables, then roll tightly
Slice the roll into pieces and serve
