Fresh Veggie Spring Rolls with Peanut Sauce
Ingredients
- brown rice paper sheets
- cucumber
- carrots
- bell pepper
- pressed firm tofu
- avocado
Peanut sauce
- 2 tablespoons crunchy peanut butter
- a splash of apple cider vinegar
- 1 tablespoon soy sauce
- 1 teaspoon maple syrup
- sriracha
- garlic powder
- ground ginger
Preparation
Thinly slice the cucumber.
Julienne the carrots.
Chop the bell pepper.
Cut the pressed firm tofu into strips.
Combine the peanut sauce ingredients: 2 tablespoons crunchy peanut butter, a splash of apple cider vinegar, 1 tablespoon soy sauce, 1 teaspoon maple syrup, sriracha, garlic powder, and ground ginger.
Mix the peanut sauce with hot water to thin it to the desired consistency.
Stuff the brown rice paper sheets with the prepared vegetables, tofu, and avocado.
Roll up the spring rolls to assemble them.
