Baked Rhubarb with Vanilla and Maple Syrup

Ingredients

  • 200g rhubarb
  • 1 tbsp vanilla extract
  • 150ml maple syrup

Preparation

  1. Chop rhubarb into chunks and add to an oven proof tray.

  2. Drizzle over vanilla extract and maple syrup then cover with foil.

  3. Bake at fan 180c for 20 mins, remove, stir to break up then bake for another 5 mins.

Uses

  1. Stew for breakfast or puddings.

  2. Bake in a crumble.

  3. Blitz into a sauce for a fish main dish.
