banana and oat muffins

Ingredients

  • 240g all purpose flour
  • 40g oats (mixed to flour) & 20g unmixed
  • 1 tsp baking powder
  • 1 tsp vanilla
  • 1 tsp cinnamon
  • Pinch of salt
  • 150ml coconut oil
  • C.a 100g stevia or sugar
  • 2 large ripe bananas
  • 2 tbsp chia seeds
  • Chocolate chips

Preparation

  1. Preheat oven to 180C

  2. Place muffin forms on a baking tray

  3. In a small bowl add the chia seeds and add c.a 50ml water (or enough to cover the seeds.) Mix and set aside

  4. Mix 40g rolled oats to flour (use a mixer or handmixer)

  5. In a baking bowl mash the bananas. Add cinnamon, vanilla, stevia or sugar as well as the melted coconut oil

  6. Add the chia seed egg to the banana mix. Mix until well clombined

  7. In another bowl mix together the dry ingredients (flour, baking powder, salt, oats). Mix. Then add to the wet mix. Mix until well combined

  8. Add the chocolate chips

  9. Pour into the muffin forms. Bake in the oven for c.a 20 minutes

  10. Eat warm or store in the freezer

  11. P.s if the mix is far too dry you can add a little oatmilk or more coconut oil. Or even another banana!)
