Chocolate Fudge Cookie Sandwiches

Ingredients

  • chocolate fudge filled cookie sandwiches :
  • cookie:
  • 3 tbsp maple syrup
  • 1/4 cup unsweetened almond milk
  • 1/3 cup almond butter
  • 2 cups almond flour
  • 1/2 tsp pink sea salt
  • 1/4 cup vegan chocolate chips
  • optional : lucuma & ashwaghanda
  • if baking : add 1/2 tsp baking powder
  • fudge filling:
  • 1/2 cup medjool dates, pitted
  • 1/3 cup almond milk
  • 1 tbsp almond butter
  • 1/8 cup cacao powder

Preparation

  1. Raw version: mix all ingredients, spoon into cookie shape and refrigerate for at least 20 minutes

  2. Baked version: mix all ingredients. Spoon onto a baking sheet, press down with a fork. Sprinkle sea salt. Bake at 350 for 13 minutes

  3. Fudge filling

  4. Cup Medjool dates, pitted

  5. Cup almond milk

  6. Tbsp almond butter

  7. Cup cacao powder

  8. Blend till creamy, freeze to thicken for about 10 minutes. Spread between two cookies and take a big ole’ bite
