Chunky Rocky Road Protein Balls
Ingredients
- 4 tablespoons nut butter
- 3 tablespoons maple syrup
- 3/4 cup low FODMAP vanilla protein powder
- 3/4 cup flax meal
- 1/4 cup 90% vegan dark chocolate
- A handful each of peanuts and cranberries, chopped
Preparation
Line tray with non-stick paper and set it aside.
Add peanut butter, maple syrup, and a pinch of salt into a medium-sized bowl and mix into a thick paste.
Add the protein powder and flax meal, and mix until combined. Roughly chop half of the chocolate and fold it into the mix along with the peanuts and cranberries.
Roll the mixture into equal-sized balls and place them on the lined tray.
Melt the second half of the chocolate and drizzle it on top.
