Chocolate Covered Cookie Dough Energy Balls
Ingredients
- 1 tbsp flax meal
- 1 tbsp coconut oil
- 3 tbsp almond milk
- 3 tbsp pure maple syrup
- 2 tbsp nut butter (I used @georgiagrinders almond butter)
- 1/2 tsp pure Vanilla bean or extract
- 1/4 cup almond flour
- 2 tbsp coconut flour
- 2 tbsp pumpkin seed flour (Or swap with additional almond flour)
- 1 tbsp green banana flour (or omit)
- 1/2 tbsp ashwaghanda (or omit)
- 2 squares @hukitchen hazelnut chocolate, chopped (or you’re favorite dark chocolate)
- Pinch of coarse sea salt (I like pink Himalayan)
Chocolate coating
- 4 squares @hukitchen simple dark chocolate, melted
Preparation
Add all wet ingredients to a large bowl and whisk well.
Add in dry ingredients except chocolate and mix until dough forms.
Fold in chopped chocolate (or chocolate chips) last.
Using a cookie dough scooper or spoon, form into small balls and set on a plate.
Refrigerate for about 10 minutes.
Meanwhile melt the rest of the chocolate either in the microwave or over the stove.
Coat each ball with chocolate, I use a spatula and basically paint the chocolate on, but you could dip them in the chocolate and roll them around.
Finish with coconut shreds and store in the fridge or freezer.
