Chocolate Covered Cookie Dough Energy Balls

Ingredients

  • 1 tbsp flax meal
  • 1 tbsp coconut oil
  • 3 tbsp almond milk
  • 3 tbsp pure maple syrup
  • 2 tbsp nut butter (I used @georgiagrinders almond butter)
  • 1/2 tsp pure Vanilla bean or extract
  • 1/4 cup almond flour
  • 2 tbsp coconut flour
  • 2 tbsp pumpkin seed flour (Or swap with additional almond flour)
  • 1 tbsp green banana flour (or omit)
  • 1/2 tbsp ashwaghanda (or omit)
  • 2 squares @hukitchen hazelnut chocolate, chopped (or you’re favorite dark chocolate)
  • Pinch of coarse sea salt (I like pink Himalayan)

Chocolate coating

  • 4 squares @hukitchen simple dark chocolate, melted

Preparation

  1. Add all wet ingredients to a large bowl and whisk well.

  2. Add in dry ingredients except chocolate and mix until dough forms.

  3. Fold in chopped chocolate (or chocolate chips) last.

  4. Using a cookie dough scooper or spoon, form into small balls and set on a plate.

  5. Refrigerate for about 10 minutes.

  6. Meanwhile melt the rest of the chocolate either in the microwave or over the stove.

  7. Coat each ball with chocolate, I use a spatula and basically paint the chocolate on, but you could dip them in the chocolate and roll them around.

  8. Finish with coconut shreds and store in the fridge or freezer.
