Homemade Apple-Filled Biscuits
Ingredients
Dough
- 1 large egg
- 1/2 teaspoon vanilla extract
- 1 1/2 cups flour
- 1/2 cup sugar
- 1/2 cup butter, chilled and cut into small pieces
- 1 teaspoon lemon zest
Filling
- 2 apples
- 2 tablespoons butter
- 1 tablespoon honey
- 2 teaspoons starch
- 1/2 teaspoon lemon zest
- 1/2 teaspoon cinnamon
Garnish
- Powdered sugar
Preparation
In a cup, place the egg and vanilla, whisk lightly with a fork, and set aside.
In a bowl, place the flour, sugar, butter, and lemon zest. Use your fingertips to mix until the butter is incorporated and resembles breadcrumbs.
Add the egg mixture and mix with your fingers, then gather the dough together.
Shape the dough into a disk, wrap it, and refrigerate for one hour.
For the filling: Peel the apples and cut into small cubes. In a saucepan, place the apples, butter, cinnamon, lemon zest, honey, and cook on low heat until dry, then let cool.
Roll out the dough and cut it in half. Place about a spoonful of apple filling on one half in several spaced places.
Place the other half of the dough over the filling.
Using a 2-inch round cutter, press to cut the dough into circles, then reroll and cut the remaining dough.
Preheat the oven to 180°C and prepare baking sheets with parchment paper.
Place the biscuits on the sheets with space between them.
Bake for 15 minutes until golden brown.
Sprinkle with powdered sugar.
