Apple-Stuffed Biscuits

Ingredients

Dough

  • 1 large egg
  • 1/2 teaspoon vanilla extract
  • 1.5 cups flour
  • 1/2 cup sugar
  • 1/2 cup butter, chilled and cut into small pieces
  • 1 teaspoon lemon zest

Filling

  • 2 apples
  • 2 tablespoons butter
  • 1 tablespoon honey
  • 2 teaspoons cornstarch
  • 1/2 teaspoon lemon zest
  • 1/2 teaspoon cinnamon

Decoration

  • powdered sugar

Preparation

  1. In a cup, place the egg and vanilla, beat lightly with a fork, and set aside.

  2. In a bowl, combine flour, sugar, butter, and lemon zest; mix with fingertips until it resembles bread crumbs.

  3. Add the egg mixture and mix with fingers, then gather the dough together.

  4. Shape the dough into a disk, wrap it, and chill in the refrigerator for one hour.

  5. For the filling, peel the apples and cut into small cubes; in a saucepan, place apples, butter, cinnamon, lemon zest, and honey; cook on low heat until dry, then let cool.

  6. Roll out the dough and cut it in half; on one half, place about a spoonful of apple filling in several spaced places.

  7. Place the other half of the dough on top.

  8. Using a 2-inch round cutter, cut the dough into circles; reroll and cut the remaining dough.

  9. Preheat the oven to 180°C and prepare baking sheets with parchment paper.

  10. Place the biscuits on the baking sheets, leaving space between them.

  11. Bake for 15 minutes until golden brown.

  12. Dust with powdered sugar before serving.
