Italian-Style Tender Lemon Biscuits

Ingredients

  • 100g margarine
  • 85g sugar
  • 50g unsweetened applesauce
  • 1 lemon (zest and juice)
  • 280g flour (T55 or T45)
  • 20g cornstarch
  • 10g baking powder
  • A pinch of salt

Preparation

  1. Cream the sugar and margarine mixture with an electric mixer.

  2. Add the applesauce, lemon zest and juice, and whisk.

  3. Add the flour, baking powder, cornstarch, and salt and form a ball.

  4. Wrap the ball in plastic wrap and refrigerate for 2 hours.

  5. Preheat the oven to 180°C.

  6. Form small balls (about a dozen) and roll them in powdered sugar.

  7. Place the balls on parchment paper, spacing them 3-4 cm apart.

  8. Bake in the oven for 15 to 20 minutes.

Tips

  1. These biscuits are crispy on the outside and soft on the inside, and they are very addictive.
