Paleo Sweet Potato Donuts with Collagen Boost
Ingredients
- 1 cup mashed sweet potato (can use canned purée or baked and mashed)
- 2 eggs
- 1/3 cup plus 1 tablespoon coconut flour
- 2 scoops ancient nutrition keto collagen
- 2 tablespoons tapioca flour
- 1 tablespoon cinnamon
- 1/4 cup coconut sugar
- 2 tablespoons almond butter
- 1 teaspoon baking powder
- Melted eating evolved chocolate (for drizzling)
- Coconut oil (for drizzling, amount not specified)
Preparation
Preheat oven to 350F
Spray the donut pan well with oil or nonstick spray to prevent sticking
Bake for 25 minutes
Let cool before removing from pan
Drizzle with melted eating evolved chocolate mixed with a little coconut oil
