Simple Austrian Vanilla Crescent Cookies

Ingredients

  • 300 g all-purpose flour
  • 100 g blanched ground almonds
  • 120 g powdered sugar
  • 1 vanilla bean
  • a pinch of salt
  • 225 g cold butter
  • 3 large egg yolks

Powdered sugar coating

  • 120 g powdered sugar
  • 1 packet Bourbon vanilla sugar

Preparation

  1. Mix flour, ground almonds, and powdered sugar in a bowl

  2. Split the vanilla bean lengthwise and scrape out the seeds

  3. Add the vanilla seeds, salt, cubed butter, and egg yolks

  4. Knead the mixture quickly by hand into a smooth dough

  5. Wrap the dough in plastic wrap and chill for 1 hour

  6. Preheat the oven to 180°C (350°F) conventional or 160°C (320°F) convection

  7. Line baking sheets with parchment paper

  8. Divide the chilled dough into 4 portions

  9. Take one portion of dough out of the refrigerator at a time

  10. Shape each walnut-sized piece of dough into a crescent

  11. Place the crescents on the baking sheet with space between them

  12. Bake for about 8 minutes

  13. Meanwhile, mix the powdered sugar and vanilla sugar in a bowl

  14. Immediately after baking, carefully roll the warm cookies in the sugar mixture

  15. Let the cookies cool completely on a wire rack
