Simple Austrian Vanilla Crescent Cookies
Ingredients
- 300 g all-purpose flour
- 100 g blanched ground almonds
- 120 g powdered sugar
- 1 vanilla bean
- a pinch of salt
- 225 g cold butter
- 3 large egg yolks
Powdered sugar coating
- 120 g powdered sugar
- 1 packet Bourbon vanilla sugar
Preparation
Mix flour, ground almonds, and powdered sugar in a bowl
Split the vanilla bean lengthwise and scrape out the seeds
Add the vanilla seeds, salt, cubed butter, and egg yolks
Knead the mixture quickly by hand into a smooth dough
Wrap the dough in plastic wrap and chill for 1 hour
Preheat the oven to 180°C (350°F) conventional or 160°C (320°F) convection
Line baking sheets with parchment paper
Divide the chilled dough into 4 portions
Take one portion of dough out of the refrigerator at a time
Shape each walnut-sized piece of dough into a crescent
Place the crescents on the baking sheet with space between them
Bake for about 8 minutes
Meanwhile, mix the powdered sugar and vanilla sugar in a bowl
Immediately after baking, carefully roll the warm cookies in the sugar mixture
Let the cookies cool completely on a wire rack
