Vegan Fudgy Brownies with Coconut Flour

Ingredients

  • 1 cup almond milk
  • 3 Tbsp flaxmeal
  • 1.5 tsp psyllium powder
  • 1 cup 70% dark vegan chocolate chopped into small pieces
  • 1/2 cup maple syrup
  • 3 Tbsp coconut oil
  • 2.5 tsp vanilla extract
  • 3/4 cup coconut flour
  • 3 Tbsp arrowroot powder
  • 1/4 tsp baking soda
  • 1/4 tsp baking powder
  • 1/8 tsp pinch of pink salt
  • 1/4 cup dark vegan chocolate chips

Preparation

  1. Preheat the oven to 180ºC

  2. Warm the milk in a saucepan until slight bubbling, then pour into a bowl. Add the flaxmeal, psyllium powder, and the 70% dark chocolate. Mix well to melt to a smooth consistency.

  3. Add the maple syrup, oil, vanilla extract, and mix well. Let sit for 5 minutes.

  4. In another bowl, mix together coconut flour, arrowroot powder, baking powder and soda and salt.

  5. Add dry to the wet and mix to combine. Fold in the dark chocolate chips. Taste and add more sugar if needed. The batter will be more of a spongy soft dough and it will continue to dry out. Do not let it sit for long. Bake immediately.

  6. Transfer batter to greased or lined pan. Pat down to flatten. Bake for 25 minutes. Cool 10 min
