Copycat Cookie Dough Larabars
Ingredients
- 15 pitted dates
- 1 cup cashews
- 1/4 cup cashew butter
- 2 tbsp vanilla protein
- Sprinkle of salt
- 1/2 cup chocolate chips
Preparation
Chop the dates and add to a food processor. Pulse until sticky and caramel-like, then remove and put into a mixing bowl.
Add cashews to the food processor and pulse for 20-30 seconds, then add to the mixing bowl.
Add in everything else except the chocolate chips.
Mix everything together well.
Fold in the chocolate chips.
Use your hands to press the dough into a big round.
Line a brownie pan with parchment paper.
Press the dough into the pan and flatten it out.
Place in the freezer for 1-2 hours. Then remove, cut, and store in the fridge or freezer.
