Copycat Cashew Cookie Larabars
Ingredients
- 15 dates (pitted)
- 1 cup cashews
- 1/4 cup cashew butter
- 1 tsp vanilla
- 1/4 tsp sea salt
Preparation
In a food processor, add the chopped and pitted dates and blend together until they form a paste. Remove and put into a mixing bowl.
Add the cashews and mix until they’re finely chopped. Add in with the mashed dates
Add the cashew butter, vanilla, and sea salt into the bowl as well
Mix together well with a spatula
Line a brownie pan with parchment paper
Take the batter and press it into the pan, use your hands to even it out across the pan
Place in the freezer for 1 hour
Remove and slice
You can store in the fridge or freezer. In the freezer they last longer!
