2-Ingredient Blueberry Cinnamon Rolls

Ingredients

  • 1 cup self-rising flour (wheat, GF blend, or cassava; DIY: mix 1 cup flour with 1 tsp baking soda and 1 tsp baking powder)
  • 1 cup coconut yogurt
  • Cinnamon (for sprinkling)
  • Wild blueberries (frozen)
  • Coconut oil (for greasing hands)
  • Coconut butter (for icing)

Preparation

  1. Knead flour and yogurt to create a dough.

  2. Roll out the dough into long rods, greasing hands with coconut oil.

  3. Sprinkle with cinnamon and wild blueberries.

  4. Roll up and place in a baking dish.

  5. Bake at 350°F for 20 minutes.

  6. Drizzle melted coconut butter over the top for icing.
