Chocolate Chip Tahini Skillet Cookie

Ingredients

  • 1/2 cup non dairy yogurt
  • 1/4 cup raw tahini
  • 1/3 cup coconut sugar
  • 1 cup fine oat flour
  • 1 tsp baking soda
  • 1 Tbsp tapioca starch or corn starch
  • 1/2 cup chocolate chips

Preparation

  1. Preheat oven to 350 degrees.

  2. Oil a 6 inch cast iron skillet.

  3. In a medium bowl, mix the yogurt, tahini, and coconut sugar.

  4. Add dry ingredients and mix until just combined.

  5. Using a spatula, transfer the mixture to the skillet.

  6. Bake for 15 to 18 minutes.

  7. This recipe was tested with both organic white flour and gluten-free oat flour, and both work great.
