Chocolate Chip Tahini Skillet Cookie
Ingredients
- 1/2 cup non dairy yogurt
- 1/4 cup raw tahini
- 1/3 cup coconut sugar
- 1 cup fine oat flour
- 1 tsp baking soda
- 1 Tbsp tapioca starch or corn starch
- 1/2 cup chocolate chips
Preparation
Preheat oven to 350 degrees.
Oil a 6 inch cast iron skillet.
In a medium bowl, mix the yogurt, tahini, and coconut sugar.
Add dry ingredients and mix until just combined.
Using a spatula, transfer the mixture to the skillet.
Bake for 15 to 18 minutes.
This recipe was tested with both organic white flour and gluten-free oat flour, and both work great.
