Chocolate Rice Crispy Bars

Ingredients

  • 4 rice cakes (80 g)
  • 1 1/3 cups dark chocolate (250 g)
  • 1/2 cup nut butter (I used sunbutter)
  • 2 tbsp protein powder
  • 2 tbsp chopped pistachios (or other nuts)
  • 2 tbsp chia seeds
  • 1/2 tsp salt

Preparation

  1. In a large bowl, crush up all of the rice cakes.

  2. Add the melted chocolate, nut butter, protein powder, pistachios, chia, and salt and mix everything well.

  3. Line a square pan with coconut oil and parchment paper and transfer the mixture into the pan, then level off the top with a spatula.

  4. Refrigerate the bars for several hours until the chocolate hardens.

  5. Take them out of the fridge, slice, top with flaky salt, and enjoy.

Tips

  1. Rice cakes can be substituted for rice cereal for better availability.

  2. This recipe is nutrient-packed and suitable for breakfast or snacks on the go.
