Easy Moist Banana Bread Loaf
Ingredients
- 3 ripe bananas
- 80 ml neutral oil (e.g., sunflower oil)
- 110 g brown sugar
- 2 large eggs
- 200 g all-purpose flour
- 3 tsp baking powder
- a pinch of salt
- 1 vanilla bean
- a pinch of cinnamon
- butter, for greasing the pan

Preparation
Preheat the oven to 180°C (356°F) for conventional or 160°C (320°F) for convection
Grease a loaf pan (23x10 cm) well with butter
Mash the bananas in a bowl with a fork
Split the vanilla bean lengthwise and scrape out the seeds
Whisk together the oil, brown sugar, and eggs
Mix together the flour, baking powder, salt, cinnamon, and vanilla seeds
Combine the dry ingredients with the oil-egg mixture
Stir in the banana puree
Pour the batter into the prepared pan
Bake in the preheated oven for about 55 minutes
Let the banana bread cool completely in the pan before removing
Tips
Stir in chopped walnuts for a nutty flavor, if desired
