Especially on Island

Ingredients

  • 1 and 1/2 cups all purpose flour
  • 3 tbs organic brown sugar
  • 1/2 tsp baking powder
  • 1-2 cups unsweetened soy milk
  • 1 tbsp oil
  • 1 tsp vanilla extract
  • for the filling:
  • for the fruit syrup:
  • 1 1/2 cup of frozen or fresh fruits
  • 3 tbs organic sugar
  • splash of water
  • instructions:
  • 1. preheat a non-stick pan or cast iron to medium heat.

Preparation

  1. Preheat a non-stick pan or cast iron to medium heat

  2. Create crepe batter by combining dry all dry ingredients and mix

  3. On a separate bowl, stir all liquid ingredients

  4. Slowly pour liquid ingredients to the dry mixture and fold

  5. Do this little by little until consistency resembles a pancake batter

  6. Lightly coat pan with a cooking spray

  7. And start cooking your crepe by pouring 1/2 cup of batter on the pan

  8. To thin out crepe, twirl the top layer with a back of a smooth spatula or, a ladle, gently in circular until batter thins out

  9. Let it sit for 2-3 minutes before flipping

  10. For the fruit syrup - preheat a small sauce pan and add your fruits of choice

  11. For this recipe, we've used frozen mixed berries

  12. Mix it with a splash of water (4-5 tablespoons) and sugar

  13. Cover and place in medium heat for 20 minutes or until syrup starts to boil or reduce

  14. Check on this occasionally and stir

  15. Turn off heat and set aside

  16. For the filling - fold coconut whip and crushed cookies together in a mixing bowl

  17. Leave some left over cookie crumbs for topping

  18. Assembly - spread filling with cookie chunks even on each crepe

  19. Roll crepes to your desired shape

  20. We rolled them in triangular shapes for presentation

  21. Top with fruit syrup and cookie crumbles
