Gluten-Free Walnut Banana Muffins

Ingredients

  • 1/2 cup coconut flour
  • 1/4 tsp salt
  • 1/2 tsp baking soda
  • 4 tbsp chia seeds (to substitute 4 eggs)
  • 1/4 cup melted coconut oil
  • 1/4 cup maple syrup
  • 2 medium mashed bananas
  • 1 tsp vanilla extract
  • 1/4 cup chopped walnuts, optional

Preparation

  1. Preheat oven to 350°F

  2. Mash the bananas using hot water

  3. Mix dry ingredients together: coconut flour, salt, and baking soda

  4. Prepare chia seed mixture to substitute for eggs by combining with water

  5. Combine wet ingredients: mashed bananas, melted coconut oil, maple syrup, vanilla extract, and chia seed mixture

  6. Blend wet and dry ingredients until just mixed

  7. Fold in chopped walnuts if desired

  8. Pour batter into muffin tins and bake at 350°F until golden and a toothpick comes out clean
