Carrot and Cranberry Muffins

Ingredients

  • 250 grams of almond meal
  • 1/2 cup of cashew milk or any milk of your choice
  • 1/2 teaspoon of salt
  • 1 teaspoon baking soda
  • 1 teaspoon of baking powder
  • 1/2 teaspoon of all spice
  • 1/4 cup maple syrup
  • 2 tablespoons of flaked almonds for the top of the muffins
  • 1 teaspoon of vanilla extract
  • 120 grams of grated carrots
  • 1/4 cup of cranberries
  • 1/4 cup of walnuts

Preparation

  1. In a bowl mix the milk, maple syrup, and vanilla extract

  2. Set aside

  3. In another bowl mix together the almond meal, salt, baking soda, baking powder, all spice and mix together

  4. Once combined add the grated carrots, walnuts and stir until combined then add the wet ingredients and combine

  5. Line a 12 case muffin tin and add the mixture then add the flaked almonds on top

  6. Bake at 180 for 20 minutes
