Gooey S'more Summer Cookies
Ingredients
- 2 eggs (if vegan you can sub in flax eggs: 1 tbsp ground flax seed + 2 1/2 tbsp water = 1 egg)
- 2/3 coconut sugar
- 4 tbsp coconut oil
- 4 tbsp almond butter
- 1 tsp vanilla extract
- 1 1/2 cups almond flour
- 1 tsp baking soda
- 1.5 tsp organic cocoa powder
- 2/3 cup vegan mini marshmallows
- 2/3 cup dark chocolate chunks
- dash of sea salt
Preparation
Preheat the oven to 350°F
In a bowl, mix the wet ingredients: eggs or flax eggs, coconut sugar, coconut oil, almond butter, and vanilla extract
In another bowl, mix the dry ingredients: almond flour, baking soda, cocoa powder, and sea salt
Combine the wet and dry mixtures to form a batter
Fold in the vegan mini marshmallows and dark chocolate chunks
Drop spoonfuls of batter onto a baking sheet and bake for 10-12 minutes or until golden brown
