Gooey S'more Summer Cookies

Ingredients

  • 2 eggs (if vegan you can sub in flax eggs: 1 tbsp ground flax seed + 2 1/2 tbsp water = 1 egg)
  • 2/3 coconut sugar
  • 4 tbsp coconut oil
  • 4 tbsp almond butter
  • 1 tsp vanilla extract
  • 1 1/2 cups almond flour
  • 1 tsp baking soda
  • 1.5 tsp organic cocoa powder
  • 2/3 cup vegan mini marshmallows
  • 2/3 cup dark chocolate chunks
  • dash of sea salt

Preparation

  1. Preheat the oven to 350°F

  2. In a bowl, mix the wet ingredients: eggs or flax eggs, coconut sugar, coconut oil, almond butter, and vanilla extract

  3. In another bowl, mix the dry ingredients: almond flour, baking soda, cocoa powder, and sea salt

  4. Combine the wet and dry mixtures to form a batter

  5. Fold in the vegan mini marshmallows and dark chocolate chunks

  6. Drop spoonfuls of batter onto a baking sheet and bake for 10-12 minutes or until golden brown
