Halloween Berry Chia Jam Pies
Ingredients
Pie crust
- 270g all-purpose flour
- 1 tbsp sugar
- 1/2 tsp salt
- 320g butter of choice, cold and cubed
- 90-100g cold water
Berry chia jam
- 2 cups mixed berries (blackberries and raspberries)
- 2 tbsp chia seeds
- 3 tbsp sugar
Preparation
Making the berry chia jam
Place the berries and sugar into a saucepan over medium heat.
Mash the berries as they begin to heat up.
When the berries have broken down to a saucy consistency, remove from heat and allow to cool a little before adding the chia seeds.
Making the pie crust
Place flour, sugar and salt into a food processor and pulse a few times to combine.
Add cold diced butter and pulse the mixture until coarse crumbs form with some pea-sized pieces then stop mixing.
Add water and pulse just until moist clumps or small balls form.
Transfer dough to a clean work surface and gather dough together into a ball without kneading.
Cover with plastic wrap and refrigerate for at least 30 minutes or overnight.
Baking and assembling
Preheat oven to 200°C.
Roll out the chilled pie dough and carefully place into tart molds.
Roll out the remaining dough and cut out using a cookie cutter.
Bake at 200°C for 15 minutes.
Reduce temperature to 180°C and bake for an additional 10-15 minutes or until golden brown.
Allow to cool completely.
Fill the crust with the berry chia jam and add the cut-out crust on top.
