Nutritious Oats and Lucuma Doughnut Balls

Ingredients

  • 2 cups oats (I used gluten free)
  • 3 tbsp Lucuma powder
  • 1/2 heaped cup ready to eat dried apricots
  • 1/2 tsp salt (optional)
  • 1/2 tsp ginger
  • 1/2 cup ground almonds
  • 3 tbsp rice syrup
  • 5 tbsp coconut oil, melted

Preparation

  1. They are best made in a metal mini donut tray or formed into balls instead.

  2. Whizz all the dry ingredients and the apricots together until finely ground.

  3. Add the melted coconut oil and syrup and process again until well mixed.

  4. Form into balls by pressing the mixture together and rolling between your palms.

  5. If using a donut tin, press the mixture into the mould.

  6. If using a metal tin, pour hot water over the base to remove the donuts easily.
