Peanut Butter Chocolate Bars
Ingredients
Base mixture
- 1 1/4 cups creamy peanut butter (unsweetened)
- 1 tablespoon Madagascar vanilla
- 1/4 cup date syrup or maple syrup or agave
- pinch of salt
- 1/2 cup gluten-free rolled oats
- 1/2 cup oat flour or almond flour
Chocolate topping
- 1 cup keto sugar-free vegan chocolate chips
- 1 1/2 tablespoons coconut oil
- 1 teaspoon Madagascar vanilla
Preparation
Warm the peanut butter in the microwave for 30 seconds or so to soften.
Add in the next 5 ingredients and use a hand mixer to combine.
Press into an 8x8 glass baking dish. Flatten with a spatula.
Add chocolate chips and coconut oil to a microwaveable dish and heat in 30 second increments until melted. Stir in vanilla.
Pour melted chocolate over the peanut butter mixture. Place in freezer for 1 hour.
Remove, slice into bars and store in the fridge.
