Peanut Butter Chocolate Bars

Ingredients

Base mixture

  • 1 1/4 cups creamy peanut butter (unsweetened)
  • 1 tablespoon Madagascar vanilla
  • 1/4 cup date syrup or maple syrup or agave
  • pinch of salt
  • 1/2 cup gluten-free rolled oats
  • 1/2 cup oat flour or almond flour

Chocolate topping

  • 1 cup keto sugar-free vegan chocolate chips
  • 1 1/2 tablespoons coconut oil
  • 1 teaspoon Madagascar vanilla

Preparation

  1. Warm the peanut butter in the microwave for 30 seconds or so to soften.

  2. Add in the next 5 ingredients and use a hand mixer to combine.

  3. Press into an 8x8 glass baking dish. Flatten with a spatula.

  4. Add chocolate chips and coconut oil to a microwaveable dish and heat in 30 second increments until melted. Stir in vanilla.

  5. Pour melted chocolate over the peanut butter mixture. Place in freezer for 1 hour.

  6. Remove, slice into bars and store in the fridge.
